Ingredients

    4 ripe bananas, well mashed
    2 eggs, beaten
    1 cup flour
    1 cup whole wheat flour
    3/4 cup sugar
    1/4 sup unsweetened applesauce
    1 teaspoon baking soda
    1/2 teaspoon salt

Directions

Preheat oven to 400 degrees. Spray muffin tin with non-stick spray, or use muffin cups.

Mix bananas and eggs in a medium bowl. Stir in remaining ingredients. Fill each muffin cup almost full and place in preheated oven for 20-25 minutes (until toothpick comes out dry). To keep them moist, place a pan of water in the oven during baking time. Makes 12 large muffins. Serve warm or cool.
