Ingredients

    1 onion
    1 red pepper
    1 eggplant
    6 small redskin potatoes
    1 chipotle pepper
    4 cups veggie stock
    1# bratwurst
    1 can black beans
    1 can cannelini beans
    1.5# green beans
    2 ears sweet corn

Directions

Sautee all veggies until soft. Add to stock. Sear brats, slice thinly and add to stock. Boil about 20 minutes. Thicken with cornstarch to desired thickness. Season with salt and pepper.
