Number of Servings: 65

Ingredients

    4 c flour
    1/2 c butter
    1 c water
    3 eggs, beaten

Directions

Boil and mash potatoes, add shredded cheddar cheese. Set aside.
Melt butter and add water, bring to a boil. Pour the hot mixture into the beaten eggs. Add all at once to the flour. Knead until smooth.
Turn dough out onto floured surface, roll to less than 1/4" thick and cut out 2" diameter circles. Add one teaspoon of potato mixture to each circle and pinch close.
Add finished perogies to boiling, salted water and cook until they are floating on the surface.


Serving Size: for simplicity, one serving is 1 perogie
