Ingredients


    1 TBSP Country Crock, Shedd's Spread Country Crock Light
    Bertolli EVOO (1 tbsp)
    Garlic, 1 clove
    Onions, raw, .25 cup, chopped
    Green bell pepper .5 cup chopped
    Red bell Pepper .5 cup, chopped
    Celery .5 cup, diced
    Paprika, .5 tsp
    Zatarain's Creole Seasoning, 1.5 tsp
    Dried Thyme, .5 tsp
    Dried Oregano, .5 tsp
    Basil, .5 tsp
    French's Classic Worcestershire sauce, 1 tsp
    Texas Pete Hot Sauce, .25 tsp
    Black Pepper (Ground), 0.25 tsp
    Red Gold Diced Tomatoes, 1 can, 14.5 oz
    Swanson Chicken Broth 100% FF, 33%less sodium, 1 2/3 cup
    Tomato Paste, 0.25 cup

Tips

I serve this over blackened Red Snapper, or throw some shrimp in when I'm cooking the veggies for some shrimp creole.


Directions

Heat butter and oil over medium heat in saucepan. Add chopped garlic, onions, peppers, and celery. Sauté vegetables for about 2 minutes or until tender. Stir in diced tomatoes, then add creole seasoning, thyme, oregano, basil, worcestershire, hot sauce, and black pepper. Boil for 1 minute. Add chicken broth and contunue boiling, uncovered for about 10 minutes. Most of the liquid will cook away. Stir in tomato paste until blended.
