    1 Cup Sweet Potato (cut into 1/4 inch cubes)
    1/4 Cup Onion, chopped
    1 Tbs Smart Balance Spread (be sure you have the one that is good for cooking)
    1/2 Tsp Ground Cinnamon
    1/2 Tsp Ground Nutmeg
    1/4 Tsp Ground Allspice
    1/8 Tsp Ground Red Pepper


Put all your ingredients into a non-stick skillet.
Cook over medium heat. Stir constantly until the spread is melted and the seasonings are evenly spread over the sweet potatos and onions. Once that happens you only need to stir occationally. You want to cook until the sweet potatos are cooked through. (the time will depend on how big your cubes are, but you can put a cover on the skillet or an overturned plate to speed of the cooking)

Split onto two plates and serve up (with what ever else you like)
