    1 large eggplant , cut into 1/2 inch slices
    2 T olive oil
    1/3 c feta cheese
    1/4c finely chopped fresh basil


Bush eggplant slices on one side arrange on baking sheet oil side up. Broil until lightly browned (5 mins)
turn oven heat down to 350. Turn slices and brush other sie with oil. Sprinkle feta over slices. Bake until cheese is bubbly, about 10 mins. Sprinkle basil over top and serve hot
