    3/4 cup of cubed eggplant
    1 oz of walnuts
    1 cup of sprouts
    1/2 a cup of cauliflower
    1 broccoli spear
    1/2 a cup of grean peppers
    2 tsp of rosemary
    2 tsp of paprika
    0.5 tsp of salt (for taste)
    2 tbsp of balsamic vinegar
    1 cup of lettuce
    3 tbsp of grated parmesan cheese


Sautee everything except the cheese and lettuce until the and while you do that drizzle the balsamic vinegar over the pan. I don't use oil because the veggies have enough juice in them.
Chop up lettuce and that will be used as the bed for everything you just sauteed. In the end top it off with the parmesan cheese and enjoy because it's a yummy, healthy, filling lunch :)
