Introduction

This is a regional favorite where I live, but most places make it with pork which I don't care for. I talked hubby into making it with chicken instead and this is his recipe. This is a regional favorite where I live, but most places make it with pork which I don't care for. I talked hubby into making it with chicken instead and this is his recipe.
Number of Servings: 16

Ingredients

    1 cup flour
    1/2 cup cooking oil

    1 14.5 ounce can of diced tomatoes (no salt added)

    8 cups chicken broth (either actual broth or made from bouillon & water, or a combination)

    4 cups diced Anaheim green chiles (fresh, roasted, peeled and skinned) Canned will work, but fresh is better
    1 medium onion - diced
    2 jalapenos - diced (more if you want it hotter)
    1-2 TBSP garlic powder
    1-2 TBSP crushed red pepper
    1 pound cooked, shredded chicken


Tips

If you want more heat throw in a few more jalapenos. The measurements are estimates because hubby never makes it exactly the same way twice, but following this recipe should make a good green chile. Feel free to experiment and find your perfect flavor.


Directions

Cooking times assume that the chicken is already cooked and shredded & that the chiles are already prepared. If you need to do that, add time.

-brown the flour (oil and flour)
-add can of tomatoes to make a paste
-add chicken broth (8 cups broth/bouillon)
-stir until the paste dissolves (no clumps)
-add onion, Anaheim chiles, garlic, pepper flakes, jalapenos & chicken
-simmer until ready to serve

Serving Size: 16 - 1 cup servings
