Vegetarian "Meat Loaf" (not vegan)
I Make a double batch because this is such a family favorite, this is our most frequently requested "celebration" entree. We like to serve it with mashed or baked potatoes and a green vegetable with a side salad.

Ingredients

    Ingredients listed here are for single (9x13) batch of 12 servings - I always double what is below and get about 21 servings by baking in 1 9x13 pan and 1 9x9 pan.
    5 beaten eggs
    24 oz cottage cheese (1% fat)
    6 T Smart Balance Butter Blend Stick (50/50)
    1 C chopped onions
    1 C chopped pecans
    3 pkgs G Washington Golden Seasoning & Broth
    1 t Marmite
    5 C Special K Cereal (Rice Flake cereal, don't sub corn flakes)

Tips

This also bakes up very nicely in well greased muffin cups for easy servings. A double recipe will yield about 26 (1/2 cup) muffin servings. Just adjust baking time to 30-45 minutes.


Directions

Place onions and butter in a microwave safe 8 cup measure and microwave on high for 2-3 minutes or until onions are tender.

In a large mixing bowl, beat eggs, add cottage cheese, nuts, and G.W. broth packets.

Stir the Marmite into the cooked onions (using the hot onions to melt the Marmite from the measuring spoon).

Add the onions/Marmite to the egg/cottage cheese mixture. Fold in the Special K cereal.

Put into a greased (sprayed) 9x13 pan (or seasoned stone pan) and bake at 350°F for 1 hr to 1:15 hr.

(For a double recipe I use 1 9x13 stone pan and 1 9x9 stone pan.)

Serving Size: Makes 21 3x3 inch pieces as a double recipe.
