    10 0z bag fresh spinach
    1 whole sweet onion
    1 tsp margarine
    3 c. 1% milk or Fat Free milk
    2 tsp chicken bullion
    2 tsp reduced fat margarine
    1 tsp flour
    1/2 tsp black pepper
    1/2 tsp Italian seasoning

    Optional Ingredients: diced chicken, diced tomatoes, diced green onions, mixed frozen vegies, whole grain penne pasta (precooked)...


Heat the soup slowly, to avoid burning the milk. Stir frequently. The blending process is dangerous with hot soup, so be very careful.


bring spinach to simmer in 3 c water. drain, chop. heat milk in sm saucepan, until steamy. Meanwhile, Sautee onions in butter, add 1 tsp flour and bullion. Add spinach and onions to milk. Season with pepper and Italian Seasoning. Simmer for 3-5 min on low. reduce heat, pour soup into blender in thirds. Blend. mix back together. blend again, in thirds. Return to heat for 3-5 min on low heat. (Add optional ingredients here.) cool before serving.
