Introduction

This is the lower fat version of my mashed potatoes, which used to contain more butter and full fat sour cream and cream cheese. This is the lower fat version of my mashed potatoes, which used to contain more butter and full fat sour cream and cream cheese.

Ingredients

    5 lbs Golden Potatoes (Peel and chopped)
    8 oz Fat Free Cream Cheese
    8 oz Fat Free Greek Yogurt (plain)
    4 T Smart Balance Butter Blend Sticks
    salt and Pepper to taste

Tips

These potatoes can stand on their own, but they are delicious with a nice vegetarian gravy as well.


Directions

Cover the potatoes with water and boil until fork tender (about 10-12 minutes)

Drain potatoes and return to pot or large mixing bowl. Add all other ingredients and mash with electric hand mixer until desired consistence (I like mine a tiny bit lumpy.)
