Number of Servings: 4

Ingredients

    2 cups vegetable broth
    2 cups broccoli florets
    1 medium carrot, sliced
    1 medium onion
    1 tsp oregano
    2 tsp minced garlic
    2 tbsp corn starch
    1 medium tomato, diced
    4 cups cooked spaghetti

Directions

Boil 1 cup broth with oregano and garlic.
Add vegetables and gently boil for 5 min.
Add remaining broth and cornstarch.
Heat to boil, reduce to low, stir in tomato.
Toss with spaghetti.

Serving Size: makes about 4 servings
