Chicken fajitas sans tortillas. Chicken fajitas sans tortillas.

    2 tbsp Olive Oil
    .5 cup chopped Cilantro, fresh
    2 cloves of Garlic, minced (or 2 tbsp granulated)
    5 Limes, juiced
    2lbs Boneless, Skinless Chicken Breasts
    4 Large Red Bell Peppers
    4 Large Green Bell Peppers
    2 Onion, Yellow or Red


I prefer to cook in bulk, hence the larger amounts of ingredients. This does save in the fridge well for about a week, so it's great for daily take to work lunches.


Take the first 4 ingredients and mix them together. This is your marinade.

Slice the chicken and veggies thinly. Put in two different lidded containers (or ziploc baggie) with the marinade (one for chicken, one for veggies). Shake vigorously to make sure everything is coated with marinade.

Let everything marinate in the fridge for at least an hour. Overnight is better.

I use two 9x13 pyrex baking dishes. Spray each one with cooking spray. Use one for chicken, and one for the veggies. Set the oven to 400 degrees, and bake for about 45 minutes.

Serve without tortillas. Add avocado or salsa if desired.
