    2 chicken breasts, cooked and diced
    1 whole med. cabbage, chopped; heart discarded
    2 pkgs ramen noodles, crushed; seasoning discarded
    1/3 c. sunflower seeds or 1/2 c. cashews
    1/2 c. lite soy sauce
    1/4 c. canola oil
    1/4 c. water
    1/3 c. vinegar
    3/4 c. brown sugar, packed
    1 tsp black or white pepper


You can omit the nuts and still have a great salad.


Brown and dice chicken breasts while preparing cabbage. Put cabbage in extra large salad bowl. Sprinkle crushed ramen and sunflower seeds over cabbage. Top with hot, diced chicken. Cook soy sauce, oil, water, vinegar, brown sugar and pepper over med-low heat. Bring to boil for one minute. Cool slightly. Pour hot liquid over cabbage mixture. Stir well. Refrigerate, stirring frequently, for 1-2 hours before serving.

Serving Size: Makes an extra large bowl that serves at least 10
