Ingredients

    *Whole Wheat Penne (dry), 6 oz (remove)
    Olive Oil, 4 1tsp (remove)
    *Kirkland Perdue Chicken Breast Boneless Skinless, 12 oz (remove)
    Leeks, 1 leek (remove)
    Garlic, 3 clove (remove)
    Thyme, fresh, .5 tsp (remove)
    Sherry, dry, 2 fl. oz (remove)
    *Flour, white, .25 cup (remove)
    Chicken Broth, 1 cup (8 fl oz) (remove)
    Milk, nonfat (skim milk), 1 cup (remove)
    Spinach, fresh, 4 cup (remove)
    *Fresh Chopped Zuchinni, 1 cup (remove)
    Parmesan Cheese, grated, .25 cup (remove)
    Fresh Chives, 4 tbsp chopped (remove)
    black pepper

Directions

cook pasta, drain and return to pot and cover.
Heat 2 tsp oil in a large skillet over med high heat. add chicken and cook, stirring once or twice. 4-6min set aside.
add remaining oil and onion, garlic, thyme..salt if you choose. reduce heat cook stirring often until soften. 5-7 min. add sherry and cook until evaporated, 1-2 min. add flour stir to coat. add broth and milk, increase heat to med high and bring to simmer, stirring constantly. cook, still thickened.
add chicken and any juice back to skillet and cook. about 3 min.
add spinach and zuchinni or any other veggie you would like. cook till soft. remove from heat and stir in parmesan and chives, stir chicken and sauce into pasta.
