    1 tbl olive oil
    1 thin slice Procuitto
    1 1/2 chicken breasts (three pieces)
    1 small onion chopped
    4 med carrots chopped
    4 cloves garlic, crushed
    3 fresh sage leaves or 1 tsp
    3/4 750 mL bottle of wine (Apothic white)
    1 cup sliced mushrooms
    1 tbl corn starch


IPreheat oven to 375. In a enamel pot (one that can go in oven) brown procuitto in the olive oil on medium heat on stove top. push to side and brown chicken on each side about 2 min each. Remove chicken. Add onions and carrots until translucent. Put the the chicken back in the pot and cover with wine. Add crushed garlic and sage leaves. Cook in oven for 20 minutes. Take out and add mushrooms cook for another 10 minutes in oven. To thicken sauce mixz in cornstarch until suace is slightly thickened. Serve with whole grain Italian bread for sopping up the gravy.
