    Ground Turkey, Whole wheat tortillas, celery, green Peppers, Onion, Taco seasoning,canned tomatos, cheese, enchilada sauce. We also make this with tofu instead of turkey.


Saute onion, bell pepper, and celery in a teeny drizzle of olive oil. Add ground turkey, cook until done. Add low salt taco seasoning. Drain tomatos and add. Cook 5 minutes.
Drizzle a thin layer of enchilada sauce in the bottom of a 9x9 pan. Put one tortilla down. Add meat, then rice. Add another tortilla, suce, then more meat and rice. Finish top by using 3 tortillas (fajita size) to cover the whole top. Add enchilada sauce and cheese. Bake at 350 for 20-30 minutes until cheese melts. Serve with black or vegitarian beans. Sour Cream optional too.
