Ingredients

    Pasta, 1lb
    EVOO, 1T
    Garlic, 3 cloves minced/sliced
    Light cream, 1 cup
    Lemons, 3 (juice and zest)
    Chicken broth, 1 cup
    S & P to taste
    Cherry tomatoes, 1 pint halved
    Arugula, half a bag
    Peas, 10oz bag

Tips

When finished, should not be liquidy on bottom, should all be absorbed. Let it sit longer or heat it on the stove for 2-3 minutes if still liquidy.


Directions

Cook pasta, strain then return to pot and keep warm.

In saute/sauce pan, heat EVOO and saute garlic 1 minute.

Add cream, lemon juice and zest, chicken broth, salt and pepper and bring to a boil then simmer uncovered for 15 minutes.

Pour sauce over pasta in pot, mix well. Add in tomatoes, arugula and peas, mix well again. Cover and let sit ~5 minutes. Mix again and enjoy!

Serving Size: Makes 4 HUGE servings (4svngs in nutritional info) or 8 portioned servings (halve the nutritional info).
