Introduction

Ingredients

    1 Tbsp Olive Oil
    1/2 Cup Finely Chopped Onion
    1/2 Cup Finely Chopped Bell Pepper
    3 Cloves Garlic, Minced
    20 oz Lean Ground Turkey
    1 1/2 Cup Cheese Square Crackers Crushed Finely
    1 Egg, slightly beaten
    2 Tbsp Reduced Fat Sour Cream
    3/4 Cup Low Sodium Tomato Sauce; 1/4 C. will be mixed in to loaf & 1/2 C. is reserved for top.
    3/4 C. Reduced Fat Shredded Cheddar Cheese

Tips

Specific brands used in my recipe and nutrition calculation are Annie's Organic Cheese Squares, Jennie-O Lean Ground Turkey, Gia Russa Low Sodium Tomato & Basil Sauce, and 2% Kraft Cheddar Cheese.


Directions

1. Saute onion and bell pepper in olive oil for 4 min. Add in minced garlic for 1 min. Let cool a bit so you can handle with hands. Preheat oven to 350 F.
2. Hand mix sauteed veggies, ground turkey, crushed crackers, egg, sour cream, and 1/4 C. of the tomato sauce until well blended. Separate into 2 halves.
3. In a small glass pan (that's been sprayed with olive oil or cooking spray) spread one half into the pan. Top with shredded cheddar cheese and then put the other half of the meat mixture on top.
4. Bake the meatloaf at 350 F for 40 minutes. After 40 minutes increase temperature to 400 F and bake 15 more minutes. After the additional 15 minutes top meatloaf with reserved 1/2 C. Tomato Sauce and bake for 10 min more.
