Ingredients

    1 pack of Jalapeno & Onion Taco Seasoning
    about 1/2 pound Frozen Chicken Tenderloins
    1 1/2 cups mild salsa
    1 cup white rice, cooked
    1 package steam fresh white and yellow rice
    1 can diced or stewed tomatoes
    I cant believe it not butter spray

Directions

Defrost Chicken either over night or in microwave. Cut chicken into small bite size pieces. Spray a large pan, with the butter spray, cook chicken until well done. Then add the taco seasoning and 1/2 cup of water
While Chicken in cooking, cook rice and corn according to directions.
After chicken is well coated in sauce, add corn and rice. Stir in with chicken
Add the salsa and stewed tomatoes.
Cook for about 5-10 minutes until bubbly.

Serve by its self, or with tortilla chips or shredded cheese. You can also put it in a tortilla shell for a burrito.

If you dont like really spicy things, use regular taco seasoning instead of the Jalapeno. If you like really spicy food, use hot salsa instead of mild.
If you want to make this more filling, use about a pound of chicken. You can also add peppers and/or onions to give it more flavor.

You can serve this as a main dish or side dish. I served mine as my main dish.

This is just something I threw together one day with things I had about the house.

Makes 6- 1 cup servings.
