    Egg Whites - Great Value 100% Liquid, 1 cup
    Egg substitute, liquid (Egg Beaters), 1 cup
    Egg, fresh, whole, raw, 2 large
    Morningstar Farms Breakfast Patties (original sausage), 8 patties
    Spinach, fresh, 6 cups
    Mushrooms, fresh, 1 cup, pieces or slices
    Paprika, .5 tsp
    Pepper, black, 1 dash
    Salt, 1 dash
    Garlic powder, 1 tsp
    I Can't Believe It's Not Butter, Original Buttery Spray, 5 sprays


Wrap any unused portions in plastic wrap and freeze. Frozen portions can be microwaved, still wrapped and on a microwave-safe plate, for 2-3 minutes or until the center is hot.


Preheat oven to 300F. Lightly coat the inside of a 9x9x3 glass baking dish with I Can't Believe It's Not Butter Original Buttery Spray.

Microwave Morningstar Farms Breakfast Patties for two minutes. Crumble into a small bowl.

Wash and de-stem spinach.

Rinse and dry mushroom pieces.

In a medium bowl, whisk two whole eggs until smooth. Add salt, pepper, paprika, and garlic powder. Add egg substitute and egg whites and mix.

Alternate layers of spinach, crumbled Morningstar Farms Breakfast Patties, and mushroom pieces, with mushroom pieces as the top layer, into the 9x9x3 glass baking dish.

Slowly pour the egg mixture on top of the ingredients in the 9x9x3 glass baking dish.

Cover the glass baking disk with a sheet of aluminum foil.

Bake covered glass baking dish in 300F oven for 1 hour. Remove foil and bake an additional 15-30 minutes until the middle is domed and all the egg on top is set.

Remove from oven, cut into four equally-sized portions, and serve.
