    1- 6oz can lump crab (drained)
    1/4 cup chopped red, yellow, orange peppers
    1 tbsp green onion
    1 egg
    3 tbsp plain greek yogurt
    1/2 cup panko bread crumbs
    4 tsp lemon juice
    1 tbsp butter or olive oil

    Optional Sauce:
    2 tbsp greek yogurt
    squeeze of lemon juice
    cayenne pepper (to taste)


In a medium bowl whisk together greek yogurt, egg, lemon juice.

Add crab meat, green onion and peppers, mixing everything together gently.

Gradually mix in breadcrumbs until mixture can be formed into patties.

Heat butter in a skillet over medium heat. Form crab mixture into 4 patties. Place patties in skillet, and cook until golden brown, about 5 to 6 minutes on each side.

Serve with optional sauce over crab cakes.
