Ingredients

    1 1/2 c whole wheat flour
    1/2 c ground/crushed flax seeds
    3/4 c oats
    1 c brown sugar
    2 t baking soda
    1 t baking powder
    1/2 t salt
    2 t cinnamon
    3 small carrots, shredded (about 1.5 cup)
    1 medium apple shredded (about 3/4 cup)
    1/4 c walnut chopped
    3/4 c nonfat milk
    2 large eggs
    1 t vanilla

Tips

When mixing wet and dry ingredients, take care to incorporate all of the flour mixture. It may seem like the batter will be dry, but keep stirring (gently). It will come together. For best "muffin" texture, don't use electric beater or food processor!


Directions

1. Prep: preheat oven to 375 degrees, line muffin tins with papers or grease and flour (as desired)
2. Combine dry ingredients
3. Beat eggs lightly, add other liquid ingredients, including apple and carrots
4. Fold wet ingredients into dry, mixing gently with a spoon or spatula until batter is uniformly moist
5. Spoon batter evenly into muffin tins
6. Bake 18-20 minutes
7. Enjoy!
