    20 oz frozen broccoli
    2 cups of cooked long grain brown rice
    1 cup of low fat sour cream
    1 can of cream of mushroom soup
    1/4 cup of finely chopped onion
    1/4 tsp salt & pepper
    1 cup of shredded cheddar cheese


Cook broccoli as directed on package. Drain; then combine the cooked rice, sour cream, soup, onion,salt and pepper. Transfer to a 2-quart casserole; sprinkle cheese over top. Bake at 350 for 20-25 minutes, until heated through. Serves 10 1/2 cup servings.
