    6 ears corn, cut off cob
    1 cup chopped red pepper
    1 cup grape tomatoes, halved
    4 scallions, thinly sliced
    1 avocado, peeled, pitted, and diced
    1/2 cup light mayo
    salt and pepper to taste


Mix all ingredients in a large bowl. Chill and enjoy!
Makes 8 - 12 servings. (I use the larger serving size as a light meal). Nutritional info calculated using 8 servings.
