Soft and chewy gluten free cookie that holds together well. Soft and chewy gluten free cookie that holds together well.
Number of Servings: 82


    1/2 c. butter
    1/2 c. shortening
    1 c. sugar
    1 c. brown sugar
    2 eggs
    1 t. vanilla
    1 t. baking soda
    1 1/3 t. baking powder
    1 t. salt
    3.5 c. gluten free flour blend
    1.5 t. guar gum (omit if in blend)
    1- 12 oz pkg. chocolate chips
    1 c. shredded coconut, sweetened (optional)


Cream butter, shortening and sugars for 3-5 minutes. Add eggs and vanilla, mix well. Stir together dry ingredients and add mixing well to incorporate all flour. Stir in chocolate chips.

Using a small cookie scoop (1T) measure out dough onto cookie sheet. Bake at 350 for 10-12 minutes, or still brown on the edge. Let cook 2 min. Remove from cookie sheet.
