Introduction

Ingredients

1/2 c each dry kidney beans, black beans, great northern beans cleaned and soaked overnight.
1 med onion
3 tbsp grape seed oil
1 tbsp garlic
1 large Zuccini large dice
1 large summer squack large dice
1 bunch fresh greenbeans (equal to 1 can)
4 large carrots chopped
2 tsp Italian seasoning
2-3 tsp better than bullion (chicken or veggie)
2 c water
2 c water
Tips
can you a can of each bean listed but greatly impacts the sodium.
I add a bit of shaved Parm (not added to caloric count
I keep the pasts and soup separate so it does not get mushy. i also do not freeze with pasta in it.
Directions
assuming beans have been soaked:
add oil and onions to pan. when translucent add garlic saute for 1-2 mins
add veggies, broth and beans
top with remaining 2c of water (i reserved mine for later in the cooking time)
cook for 1-2 hours on stove or 4-5 hours low on slow cooker
cook and drain pasta
add 1/10 of pasta to bowl and top with 2c of soup
enjoy
add S&P to taste
