Ingredients

    2 T olive oil
    2.25 lbs boneless, skinless chicken breast, cut into chunks
    1/2 medium onion, sliced
    1 (14.5 oz) can diced tomatoes, with liquid
    1/2 cup balsamic vinegar
    1 t dried basil
    1 t dried oregano
    1 t dried rosemary
    1/2 t thyme
    salt and pepper, to taste

Directions

Heat olive oil in skillet over medium heat. Season chicken with salt and pepper. Brown chicken in skillet with onion. Add in diced tomatoes, balsamic vinegar, and herbs. Simmer, stirring frequently, until chicken is no longer pink and juices run clear, about 20-25 minutes.
