    1/2 cup cooked brown rice
    1 large onion, chopped
    2 lbs Zucchini or 4 Large Zucchini chopped
    4 Cloves chopped Garlic
    1/2 cup Trader Joe's Quatro Formagio cheese, but you can use any kind of white cheese.
    2 Eggs
    1/2 cup Grated Parmesan Cheese
    Seasoning to taste, mixed variety


Heat oven to 375. Spray pan with Pam
Cooke rice in plenty of boiling water.
Chop onion, garlic and zucchini
Spray pan with Pam and cook Onion, Garlic until soft about 5 minutes, then add zucchini, cook over low heat stirring often for about 10 minutes.
Beat eggs in a large bowl stir in cheeses, rice and cooked vegetables.
Put in prepared pan and bake until firm, 40 to 60 minutes.
Serve hot, cold or warm.

Serving Size: Makes 1 loaf pan or 6-8 servings
