Originally from allrecipes.com but I removed the butter. My family loves them, including the picky 7yr! I think they taste better than regular flour pancakes. Number of Servings: 18

Ingredients

    1 cup whole wheat flour
    2/3 cup all-purpose flour
    1/3 cup wheat germ (or rolled oats)
    1 1/2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    2 Tbsp brown sugar
    3 Tbsp olive oil (or other cooking oil)
    3 Tbsp unsweetened applesauce
    2 eggs, beaten
    2 1/2 cups buttermilk (or 2 Tbsp vingar & rest low-fat milk)

Directions

Makes 18 4" pancakes.

Place all dry ingredients into a blender or food processor and blend.
Pour dry ingredients into a bowl and make a well in the center.
Place all wet ingredients into a bowl and mix.
Pour weti ingredients into the well and carefully mix with a spatula, until no lumps.
Heat non-stick skillet to medium-low temp.
Pour batter into 4" pancakes and cook for 1 1/2 minutes on each side. Be careful not to burn pancakes.
