Ingredients

    4 cups Italpasta cooked small shell noodles (3 cups dry)
    2 teaspoons virgin cold-pressed coconut oil
    2 teaspoons lemon juice
    3 cloves garlic, crushed
    1/2 cup onion, diced
    1/2 cup carrots, chopped
    1 cup red bell pepper, chopped
    1 cup mushrooms, chopped
    1 cup tomato, chopped
    1 1/2 cup broccoli heads, chopped
    1 teaspoon Louisianna Hot Sauce
    4 pieces Low Fat Laughing Cow Swiss Cheese

Directions

* Cook the pasta as per the directions on the package.

* Stir fry all the vegetables in the coconut oil, lemon juice, 1 clove garlic. If you add the garlic just at the end, you only need one clove. If you add it at the beginning, add the second clove just after you turn off the heat. It gives it a nice garlicy (but not too much) taste. I like my veggies really cooked, probably more than most people. Cook to the doneness that you prefer.

* Measure out 1 cup of pasta per serving. Chop 1 piece of the Laughing Cow cheese over top of each serving. Top each with 3/4 cup of the stir fry veggies.

Serving Size: Makes 4 servings of 1 cup pasta with sauce
