    4 medium potatoes
    1 bunch broccoli
    1 head cauliflower
    1 cup onion, chopped
    1 lb ham
    2 cups shredded cheddar/jack cheese
    6 cups water


Wash all vegetables and chop into evenly sized chunks. Put all the vegetables into a large pot and cover with the 6 cups of water. Cover the pot, bring to a boil and cook for 20-30 minutes, until the vegetables reach your preferred level of tenderness. Remove the pot from heat and puree with a stick blender until it reaches the desired consistency. I like leaving some small chunks. Cube the ham in small cubes and add to soup. Cover the pot and bring to a boil. Cook for 5-10 minutes, depending on the size of your ham chunks, you want to make sure it is thoroughly cooked. Remove from heat, stir in the shredded cheese and season with salt and pepper to taste.
