    1 lb. ground beef
    1 chopped onion
    2 cloves garlic
    1 envelope taco seasoning mix
    1/2 cup water
    1 can Rotel tomatoes with chilis
    1 can refried beans
    1 cup salsa
    2 cups shredded Mexican cheese (divided)
    1 can black beans
    1 can yellow corn
    8 corn tortillas


Can top with sour cream and avocados.


Brown ground beef with onions and garlic, drain well. Add taco seasoning mix with water and Rotel tomatoes; stir well and simmer until thickened. In a saucepan, heat refried beans with salsa and 1 cup of the cheese; stir until cheese is melted. Drain black beans and corn; rinse well.

Spray a 13 x 9 pan with cooking spray. Cut 4 corn tortillas in half. Layer 2 whole and 4 1/2 pieces on bottom of pan. Top with 1/2 of the refried beans mixture, then layer on 1/2 the ground beef mixture, 1/2 cup of cheese, the corn and black beans. Repeat with another layer, but leave the cheese for the top. Cover with aluminum foil and back at 350 for 30 minutes.
