    * Cabbage .5 head, medium (about 5-3/4" dia)
    * Carrots, raw, 4 large (7-1/4" to 8-1/2" long)
    * Onions, raw, .5 cup, sliced
    * Balsamic Vinegar, 3 tbsp
    * Peanut Oil, 3 tbsp
    * Cumin seed, 1 tbsp


Shred the cabbage & carrots. Finely slice the onion.

To reduce wateriness: Add 1c boiling water & 1T salt to cabbage and let sit 10 minutes. Remove, rinse, and drain in a colandar 30min. Meanwhile, at a very low temperature - 175-200 degrees - dry the carrots and onions for 1 hour.

Mix all ingredients and serve. Makes about 7 cups.
