Introduction

This makes a great topping for sweet potatoes! This makes a great topping for sweet potatoes!
Number of Servings: 4

Ingredients

    1 block extra firm tofu
    .5 can sweet corn, drained
    1 can of black beans, drained and rinsed
    1 packet of taco seasoning
    *Sriracha hot sauce
    *chipotle smoked tobasco
    *onion powder

    (Starred items were not added to the ingredients in the nutritional info, as they did not have a spark entry and will add a very negligible amount of calories)

Tips

My favorite way to eat this is over a sweet potato-- but it's also very good as a salad topper with some crisp iceberg lettuce and salsa with some lowfat baked tostitos corn chips. YUMMY.


Directions

1. drain and mash the tofu.
2. add onion powder, hot sauce and tobasco. (I add about 1 T of onion powder, 2 T of Tobasco, and 1 T of sriracha, but I like my stuff hot.)
3. Throw tofu in a large non-stick skillet on medium heat and let it cook, uncovered, flipping and stirring every 3 minutes or so for 15 minutes. The tofu should be getting dry and crispy in parts. Set aside.
4. Throw black beans and corn into a skillet with taco seasoning packet-- follow packet instructions (usually add 1/2 c water, bring to boil, simmer uncovered 3-4 minutes)
5. In the last minute of cooking (sauce is thickening up), toss in your dry fried tofu to coat with the sauce.

Serving Size: makes 4 servings, about 1 cup each
