Ingredients

    16 oz. shrimp, peeled and de-veined
    4 cloves garlic, minced
    4 jalapeno peppers, minced
    2 cups fresh or canned tomatoes, chopped
    2 tablespoons olive oil
    Salt and Pepper to taste
    1 pound linguine


Directions

Directions:
Put a large pan of water on high heat. When the water comes to a boil, add linguine. Stir to separate. Set timer as per pasta manufacturer's directions.
Meanwhile, add oil to a large saute pan set to med-high.
Add peppers and cook until slightly tender. Add garlic. Cook about 30 seconds, then add tomatoes. When mixture is combined and heated through, add shrimp. Stir to coat shrimp with mixture and put lid on. Watch carefully. When all of the shrimp have turned pink, remove pan from heat. Salt and pepper to taste.
When the pasta is al dente, drain thoroughly. Add the pasta back to the pan and lower heat to med-low. Add the shrimp mixture and stir to combine. Allow to heat for 2-3 minutes. Empty pan into serving dish. Top with 2 oz. freshly grated Parmesan cheese and serve hot.
