Ingredients

1 can (15 oz) low sodium black beans, drained & rinsed
2 medium ripe bananas
2 egg whites
1/4 cup sugar
1/4 cup Splenda
1/3 cup cocoa powder
1/2 tsp baking powder
1 tsp instant coffee powder
1 tsp vanilla extract
3/4 cup oats
Coconut Caramel Sauce:
1 (15oz) container lite coconut milk
1/2 cup Splenda brown sugar blend
1 tsp vanilla extract
Directions
1. Preheat oven to 350 degrees. Lightly spray a 12 cup muffin tin with cooking spray and set aside.
2. In a food processor, puree all ingredients, except the oats, for 2 minutes. Add the oats and pulse a few times to incorporate them into the batter. Pour batter into prepared pan.
3. Bake 25 - 30 minutes, until a toothpick inserted comes near the center out clean.
4. To prepare the sauce: In a small sauce pan over high heat, combine all ingredients and bring to a boil.
5. Boil for 3 minutes, then lower heat to medium and simmer for 20 minutes or until the mixture has reduced by 3/4, stirring occasionally.
4. Once reduced, remove from the heat and allow to cool. It will thicken as it cools.
