    2 T. Olive oil
    7 large carrots. trimmed, peeled and thinly sliced
    1 large onion, thinly sliced
    3 1/2 t. honey
    1/2 t. dried thyme
    4 c. vegetable broth
    1/4 c. orange juice
    1/2 t. fresh lemon juice
    sweet fresh basil, cut into long thin strips
    pepper to taste


Heat the oil over medium heat in a soup pot. Add carrots and onions; saute, stirring occasionally, until tender, about 20 minutes. Add honey and thyme and cook for about a minute, stirring until blended. Add broth and bring to a boil. Reduce to a simmer and cook, partially covered for 30 minutes. In batches, remove solids with a slotted spoon and puree. Stir back into liquid in pot. Stir in the orange and lemon juices. Season with pepper to taste. Serve in bowls garnished with fresh basil.
