    1 pound Italian mild sausage
    132 g frozen pepper medley
    1/2 medium onion, about 95 grams chopped
    20 g Parmesan cheese, shredded
    56 g Cheddar cheese, shredded
    6 large eggs
    90 g Half n' Half (about 6 Tbsp)
    Salt & Pepper to taste


If you use a regular sized cupcake pan, the recipe will make 12. I used a large non-stick 6 cup pan.


Preheat oven to 350 degrees.

Brown sausage in fry pan & distribute among cups.

Add onions & peppers to pan & cook until vegetables are soft & distribute among cups.

Add spinach to cups & top with cheeses.

In a large bowl, mix eggs, half & half, & salt & pepper. Whisk until well blended & distribute among cups.

Cook for 10 minutes & then turn pan around & cook for another 10 minutes. I used a convection oven so you may need to cook this longer in a regular oven.

Serving Size: Makes 6 large cups or 12 regular.
