Ingredients

    16 oz Ground beef, lean
    1 cup shredded cheddar cheese
    1 slice of bacon chopped
    1/2 small onion diced small
1 ear of corn (cut kernals off the ear)
2 medium potatoes diced into small cubes
2 large yellow peppers cut in half

Directions

Mix the first 6 ingredients together in a bowl. Add whatever spices you want. Usually I use celery salt, pepper, and a dash of hot sauce. If you want, you can also add some worchestershire sauce or A1. Remember to add those calories in, though.

Now, take the mixture and stuff the halves of the peppers. Use all of the mixture! Pile those ingredients high!

Put them in a caserole dish and bake in the oven until cooked through. Depending on what temperature, it should take about an hour. Cover them for the first 30 minutes to make sure they don't get too dry during cooking.

After they are done, cut each half in half again. This will give you 8 servings.
