Introduction

Ingredients

    4 - Flour tortillas, burrito-size
    4 - slices cooked ham (97% fat free)
    1- 8 ounce package Neufchatel cheese
    1 - 4 ounce can green chiles, chopped
    10 - black olives, large, chopped
    2 - stalks green onion (tops only) - chopped
    3 TBS cilantro, chopped
    3 TBS Sriracha hot chili sauce

Directions

Allow Neufchatel cheese to soften on counter for approximately an hour to make mixing of ingredients easier.

Put cheese, green chiles, olives, green onion, cilantro and Sriracha into a small bowl. Mix until thoroughly blended.

Place one tortilla on a plate; spread 3 tablespoons of cheese mixture onto the tortilla, taking care to spread this to the edges of the tortilla so the entire surface is covered. Place a slice of ham onto the bottom center half of tortilla. Starting with the end where the ham is located, roll up the tortilla in pinwheel fashion.

Place in refrigerator approximately one hour. Slice into bite-sized portions.

Makes 4 lunch-sized portions (one tortilla per person). May also be served on a platter as an appetizer.
