Ingredients
100g fresh chopped pineapple
2lb ground turkey
1 whole egg
1 eggwhites
1/4 cup coconut flour
3 cloves minced garlic
1 tablespoon fresh grated ginger
1/4 cup fresh chopped parsley
2 finely chopped green onions
1 dried chilli pepper
1/4 cup canned unsweetened coconut milk
1 tablespoon coconut aminos
1 tablespoon Dijon mustard
1 1/2 teaspoon sesame oil
1 teaspoon Mrs. Dash Garlic & Herb or Chicken flavor seasoning
1 teaspoon fresh cracked black pepper
Tips
Have just 1 or 2 meatballs as a snack or throw a few more on top of a bed of mixed greens or on top of shirataki noodles as a low carb spaghetti.
Directions
Preheat the oven to 425F and line a large baking sheet with parchment paper.
Add all the ingredients to a large mixing bowl and mix with your hands until very well combined.
Immediately form the meat mixture into 48 balls, and place them onto the reserved cookie sheet.
Place the meatballs in the oven and cook for 10 minutes at 425F, then lower the temperature to 350F and continue cooking for about 20 minutes, until the meatballs are cooked through and crispy and golden brown all around.
Transfer the cooked meatballs to a serving dish and garnish with a few pieces of fresh pineapple and fresh parsley, if desired.
