Ingredients


    2 CUPS COOKED SPAGHETTI SQUASH
    1 CUP SKIM MILK
    4 EGGS
    1/2 CUP EVAPORATED SKIMMED MILK
    1/4 CUP FLOUR
    1/4 CUP SUGAR
    2 T + 2TSP OF MARGARINE
    1/2 TSP VANILLA EXTRACT
    1/2 TSP COCONUT EXTRACT
    1/4 TSP BAKING POWDER



Directions

Preheat oven to 350o spray 9 inch pie plate with cooking spray. spread squash over bottom and sides of pan to form crust.(use back of a spoon) set aside.
In blender put remaining ingredients and blend until smooth, pour over squash. bake for 50 min to 1 hour. until knife inserted in center comes out clean. let pie cool on rack for 1 hour, wrap and keep in frig.
(optional) can serve with ff whip cream on top.
