    1 lb dried black beans, rinsed
    1/2 pound carrots, chopped
    1 onion, chopped
    1 chipotle in adobo, chopped fine
    6-7 slices bacon


cook bacon until crisp, then set aside. Remove all but about 2 tbsp. bacon fat from pan. in remaining bacon fat, sauté onion and carrots until onion is translucent. add garlic, cumin, and chipotle and sauté about 30 second. add black beans and enough water to cover the beans by about an inch. bring to a boil, then simmer for 2.5-3 hours until bean are tender. add salt and pepper to taste in the last 20 minutes of cooking. Crumble bacon and add it back in for the last five minutes.
Serve with a spoonful of sour cream on top.
