    5 lbs of boneless / skinless chicken breasts (mine had 7 breasts)
    1 (3") piece of ginger
    5 large garlic cloves
    juice from one small lemon
    1 tsp. salt
    1/4 c of water
    3 Tbl extra virgin olive oil
    1 large tomato
    3 c. loosely packed cilantro (stems and leaves)
    1 poblano pepper, seeded
    1 Tbl tomato paste
    1 c plain, fat free greek yogurt


This made a LOT of sauce! I think you could use more chicken and still have a great result!


Set the chicken and yogurt aside
Puree the remaining ingredients and then pour over the chicken (leave the yogurt to the side for now).
I baked this is a roaster oven at 350 for 45 minutes. Could also be done in a crockpot or even on the stove.
Stir in the yogurt and allow it to cook for the last 10 minutes.

Serving Size: One chicken breast (in this case, each breast was nearly a lb)
