Introduction

Ingredients

    1 head cauliflower
    1 sweet onion (or your favorite onion)
    4 tsp garlic, minced (more or less to taste)
    2 Tbls olive oil

Tips

1) Line cookie sheet with foil for easy clean-up.
2) Salt & pepper to taste. Salt will increase the sodium count in the recipe. I normally don't use any!
3) REALLY nice drizzled with a bit of balsamic vinegar at serving.


Directions

Preheat oven to 425 degrees.

Remove outer leaves from cauliflower. Wash cauliflower. Break into florets keeping them as evenly sized as possible. Wash again & dry with a paper towel. Place in a plastic bag.

Peel onion. Cut in half & then each half in thin wedges. Place in the plastic bag.

Add garlic & olive oil to the plastic bag. Secure. Shake until the cauliflower & onions are coated with the garlic and olive oil.

Place all ingredients on a cookie sheet. Place in oven uncovered. Roast for 30-35 minutes stirring 2-3 times.

Makes approximately four 1 1/2 cup servings.
