Ingredients

    1-can of black beans
    1-can of red kidney beans
    2-cans of stewed tomatoes
    1-can of diced tomatoes with green chilies
    1-can of diced tomatoes in chili sauce
    1-package of taco seasoning
    1-onion (optional)
    1-cup of frozen corn
    1/2 cup of uncooked quinoa (rinsed)

Tips

add a dollop of plain yogurt and cheddar cheese as a delish topping and/or garnish with tortilla strips for an added crunch.


Directions

puree both cans of stewed tomatoes and add to crockpot
Rinse and add beans
add quinoa diced tomatoes, diced onion, taco seasoning packet and frozen corn.Cook in crockpot for 6-8hours.
