Ingredients

    2C *Red Kuri Squash, cubed
    2C *Squash, winter, acorn, raw, cubed
    2 C Butternut Squash, cubed
    2 medium Carrots
    1 large *Peppers, sweet, red, fresh
    1 medium Onion
    2 tbsp *Pine Nuts
    2 tbsp Olive Oil, Extra Virgin
    1tbsp Curry powder
    1/2 tsp Pepper, red or cayenne
    3 cloves Garlic

Tips

Veggies can also be baked in hot oven.


Directions

Wrap all cut vegetables, garlic, pine nuts and olive oil in aluminum foil. Place on hot grill. Allow to cook approx. 45 min. When veggies are soft. Remove from heat. Puree veggies in food processor. Combine pureed veggies with broth, curry and cayenne in large pot. Allow to simmer over low heat for 45-minutes
