Number of Servings: 6

Ingredients

    1 tbsp of Olive Oil
    1 lb of Lean Ground Turkey
    1 Cup of Red Kidney Beans
    1 Medium Yellow Onion, Diced
    1 cup of canned sliced mushrooms
    Half a Green Bell Pepper, chopped
    1 tsp of Garlic Powder
    1 tsp of Chili Powder
    3 cups of Salsa

Tips

You can also use fresh mushrooms. You can also add more or less chili and garlic powder to taste. I use mild salsa but for the spicy lovers out there try using medium or hot to give it an extra kick.


Directions

Heat olive oil in a large pan over medium to high heat, cook ground turkey until brown. Add kidney beans, onion, mushrooms, green pepper, garlic powder, chili powder and salsa. Mix thoroughly. Cover and let simmer for 20 minutes. Add cheese if desired.

Serving Size: Makes 6 1 1/2 cup servings.
