Ingredients

    Eggs
    Corn Tortilla
    Green Pepper
    Jalapeno
    Onion
    Cumin
    Red/Kidney Beans
    Cheddar Cheese
    Diced Tomatoes
    Salt
    Pepper
    water
    Olive or Canola oil
    Cilantro

Directions

Set oven on broil
Saute onions, jalapeno, garlic and green pepper for 5-6 minutes in pain prepared with half of the oil
Add tomatoes and beans, stir occasionally
Scramble eggs in separate pan with a tablespoon of water, salt and pepper to taste. May add cilantro to eggs or tomato mixture if desired
Brush both sides of tortilla with oil and broil until golden brown
Flip and top with tomato mixuture, eggs and cheese. Broil until cheese is melted.
